Born on the
waterfront.
Citizen Fish started in 2012 with a truck, a grill, and an obsession with cooking seafood the way it deserves to be cooked — simply, boldly, with respect for the fish.
Marcus Webb grew up on the Gulf Coast. His grandmother fished every Saturday morning and cooked whatever came up. There were no menus, no presentation — just a cast-iron skillet, good seasoning, and people who ate like they meant it.
After years cooking in restaurant kitchens, Marcus realized the food he loved most never appeared on white tablecloths. He bought a used truck, painted it dark, and parked it downtown on a Tuesday. By Thursday, the line wrapped around the block.
Twelve years later, Citizen Fish still runs one truck. Still uses the same seasoning blend. Still sources from the same three Gulf Coast families. The only thing that's changed is the online ordering.

Sourcing with integrity
We buy directly from fishermen we know by name. If the catch is off, we pull the item from the menu rather than swap in inferior fish.
Cooked to order, always
Nothing sits under a lamp. When you order, we cook. That's why we give you a pickup time — it's when your food will actually be ready.
Fair for everyone
Our prices are set so that a line worker eating lunch and a chef eating dinner can both afford to come back. Good food doesn't have to be expensive.
